The Paloma: A Bright, Grapefruit-Infused Mexican Classic

The Story/Context:

While the Margarita gets the spotlight, the Paloma is arguably the most beloved cocktail among locals in Mexico. It is a refreshing, sparkling blend of grapefruit and lime that hits the perfect balance of tart, sweet, and effervescent. It is the ideal drink for warm afternoons.

Why It Works:

The bitterness of the grapefruit pairs beautifully with the acidity of lime and the slight fizz of soda water, creating a light, crisp profile that isn't overly sugary.

Ingredients:

  • 2 oz silver tequila

  • 2 oz fresh pink grapefruit juice

  • 1/2 oz fresh lime juice

  • 1/2 oz agave nectar

  • Top with soda water

  • Garnish: A grapefruit wedge and a pinch of sea salt on the rim

Instructions:

  1. Rub a lime wedge around the rim of a glass and dip it into sea salt.

  2. Fill the glass with ice.

  3. In a shaker, combine tequila, grapefruit juice, lime juice, and agave. Shake briefly with ice.

  4. Strain into your prepared glass.

  5. Top with soda water and stir gently.

Chef’s Pro-Tip:

"Use freshly squeezed grapefruit juice instead of bottled if you can. The natural oils in the fresh juice add an aromatic complexity that really makes this drink shine."
